The Bikini Cocktail

Makes enough for 10 servings

For the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

Ingredients for the Premix (produces 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch

Instructions

To prepare the Cordial: Place the listed components in a saucepan, heat until it reaches a light boil, stirring to dissolve. After that, take off the heat and let it to reach room temperature entirely. Decant into an sterilised bottle, close it and store chilled, where it will keep for up to a month.

To make Batch Mix: Combine all the liquids in a large bottle, let it rest for 60 minutes, then filter it best through muslin, to ensure it's perfectly clear.

For serving: Pour 85ml of your premix into your mixing glass containing ice, and agitate gently for a minute to cool it down. Strain into a cold coupe glass or equivalent, garnish with a few cranberries adding the final touch with a light spray of mandarin oil above the glass.
